In honor of National Nutrition Month, incorporate Nutrition Works’ Berry & Barley Salad into your next dinner. The refreshing salad contains spinach, barley, blueberries and raspberries and is a tasty compliment to any meal.
Berry and Barley Salad
– 2 cups cooked barley
– 1 tablespoon olive oil
– Juice and zest of 1 lime
– 4 cups chopped baby spinach
– ¼ cup chopped red onion
– Mix together
– 1 cup fresh blueberries
– 1 cup fresh raspberries
– Gently fold in berries
– Salt and pepper to taste
– Chill and serve
Ensalada de espinacas con bayas y cebada
– 2 tazas de cebada cocida
– 1 cucharada de aceite de oliva
– Jugo y ralladura de 1 lima
– 4 tazas de espinacas tiernas picadas
– ¼ de taza de cebolla morada picada
– Mezclar todo junto
– 1 taza de arándanos frescos
– 1 taza de frambuesas frescas
– Doblar suavemente las bayas
– Sal y pimienta para probar
– Enfriar y servir
